I am a YUGE fan of mind-blowing, amazing coffees with flavors that sparkle and dance and explode like pop-rocks on your tongue. I really like unbalanced, extreme flavors in coffee, beer and food. What I LOVE in coffee though is complexity of flavor, perfect balance, nuance, depth and refinement. I lose my mind over coffees that display the rarest of all attributes: a complete circle of flavor that has pleasant attributes from several section of the flavor wheel. Coffees balanced with both extremes in flavor and nuanced in refinement. Those coffees that are deeply sweet, well-balanced, display structured acidity and well-developed mouthfeel. Coffees where no single attribute or flavor dominates the flavor party. Coffees that are open and inviting and extraordinary but remarkably easy to receive. Friendly Coffees I typically despise the phrase “approachable coffees” not because of what they are, instead because of how the phrase too often justifies disingenuous actions. Today the Specialty coffee world is afire with the news about one of our own idols Stumptown Coffee being sold (again), this time to Peet’s Coffee. The reactions range from FU$KI%G SELLOUTS! to HELL YEAH CONGRATS! I’m firmly in the congratulations camp. The people at Stumptown have operated at the highest level of awesomeness for 15 years. That’s 131,400 hours of passion, pressure, stress, focus, grueling work, details, execution, and blood. I doubt if most people reacting negatively to the news could have made it even half as many hours. Let alone accomplish even a small portion of what they accomplished. I am immensely proud of what they have accomplished and freakishly excited for what they will accomplish in the future. Stumptown has always been one of my role models. I have aways admired their coffee, their quality, their passion and the fucking brilliance of everything they did. Their coffee has always rocked. Their people have always rocked as well. What more can you ask for? And Peet’s Coffee, although stumbling for a while seems to be regaining some of their mojo. Specialty Coffee is a Journey. A long, arduous journey of seeming contradictions, nonsensical actions and a keen focus on the triple bottom line. This is not a Specialty Coffee only value by any stretch, but it is intrinsically interwoven into the very fabric of what Specialty Coffee means. When we are asked to define Specialty Coffee or Craft Coffee we invariably espouse the benefits of each of the three pillars of profit. Some focus primarily on two of the three, some strive to balance the three, but the vast majority of us societal misfits stick doggedly by our conviction that not only CAN we achieve a balanced triple bottom line but that we SHOULD achieve it.
